What Is Vegan Deli Meat? Ingredients, Taste & How It’s Made

If you’ve ever looked at a vegan sandwich and thought:

“Okay…but what exactly is that ‘meat’?”

Fair question.

Vegan deli meat has come a long way from the mysterious rubbery slices hiding in the back of the health-food aisle.

Today, plant-based deli meats can be smoky, peppery, savory, tender, stackable, grillable, melt-worthy and good enough to make an absolutely disrespectful Reuben.

And at RHW, vegan deli meat is kind of a big deal.

We started making our own because we wanted deli slices that actually worked for the sandwiches we were creating at our Atlanta café.

Eventually, those house-made meats became PLNT Deli by RHW.

So let’s break down what vegan deli meat actually is, what it’s made from, how it’s made, how it tastes, and what to look for when choosing one.

What Is Vegan Deli Meat?

Vegan deli meat is a plant-based alternative to traditional sliced meats like turkey, roast beef, corned beef, pepperoni, ham and similar sandwich proteins.

The goal is not necessarily to recreate meat molecule-for-molecule.

The goal is to recreate the things people actually enjoy about deli meat:

  • Savory flavor

  • Seasoning

  • Tender texture

  • Thin, stackable slices

  • Smokiness

  • Peppery crusts

  • A satisfying bite

  • The ability to build a serious sandwich

No animals required.

Vegan deli meat can be used anywhere you would normally use sliced deli meat, including sandwiches, wraps, paninis, subs, charcuterie boards and quick snacks straight out of the refrigerator.

We know some of you are doing that last one.

No judgment.

What Is Vegan Deli Meat Made From?

There is no single formula.

Different vegan deli brands use different combinations of plant proteins, grains, legumes, seasonings, oils and binders to create the flavor and texture they want.

Common ingredients in plant-based deli meats can include:

  • Wheat protein

  • Pea protein

  • Chickpeas or other legumes

  • Beans

  • Lentils

  • Tofu or soy protein

  • Vegetable oils

  • Herbs

  • Spices

  • Natural flavorings

  • Vegetable-based seasonings

Some products are soy-based.

Some are soy-free.

Some are gluten-free.

Others use wheat gluten specifically because it creates a firm, chewy deli-style texture.

That is why it is important to read the ingredients instead of assuming every vegan meat is made the same way.

Is Vegan Deli Meat the Same as Seitan?

Not always.

Seitan is food made primarily from wheat gluten, the protein found in wheat.

Because wheat gluten develops a firm, chewy texture when cooked, it works extremely well for plant-based meats.

Some vegan deli meats are essentially seasoned seitan.

Others combine wheat protein with legumes or other plant ingredients.

And some do not use wheat at all.

So while many vegan deli meats fall somewhere in the seitan family, the terms are not automatically interchangeable.

How Is Vegan Deli Meat Made?

The exact process varies from brand to brand, but most plant-based deli meats follow a similar basic idea.

Step 1: Build the flavor

Traditional deli meat gets much of its identity from seasoning.

The same is true for plant-based versions.

Think about the difference between corned beef and peppered turkey.

The protein matters, but so do the spices.

Salt, garlic, pepper, herbs, smoke, savory seasonings and other flavors help establish what the finished deli meat is supposed to become.

Step 2: Create the protein base

Plant proteins and other ingredients are combined to create a mixture capable of developing the desired structure.

The trick is balance.

Too soft and you cannot slice it properly.

Too firm and congratulations — you made a plant-based hockey puck.

Neither is ideal.

Step 3: Shape it

The mixture is formed into a loaf or similar shape before cooking.

That allows it to develop the structure needed for deli-style slicing.

Step 4: Cook it

Depending on the recipe, vegan deli meats may be baked, steamed, simmered or prepared using a combination of techniques.

Cooking develops both flavor and texture.

Step 5: Chill it

This part matters more than people realize.

Cooling allows the loaf to firm up, making it easier to create clean, thin deli slices.

Step 6: Slice it

And now we finally get to the good part.

Once properly chilled, the vegan deli meat can be sliced for sandwiches, wraps, boards and whatever else you have planned.

Or eaten directly while standing in front of the refrigerator.

Again.

No judgment.

What Does Vegan Deli Meat Taste Like?

That depends entirely on the style.

Good vegan deli meat should not just taste like “vegan meat.”

It should have its own identity.

A plant-based turkey should taste different from a corned-beef-style deli slice.

A pepperoni should taste different from roast beef.

The seasonings, cooking method and texture should all support that flavor.

At PLNT Deli, we currently make deli-style products including:

Corn’d Beeph

and

Roasted Peppered Turk’y

Both were developed to work inside real deli sandwiches.

That means flavor was not an afterthought.

The sandwich came first.

What Is Corn’d Beeph?

Our Corn’d Beeph is a plant-based take on classic corned beef-style deli meat.

The goal is savory, seasoned deli flavor that works especially well in sandwiches like a Reuben.

It can also be used for:

  • Hot sandwiches

  • Cold sandwiches

  • Wraps

  • Charcuterie boards

  • Breakfast dishes

  • Quick snacks

At RHW, it is one of the ingredients that helps us build our plant-based take on deli classics.

You can learn more about our current PLNT Deli plant-based meats.

What Is Roasted Peppered Turk’y?

Our Roasted Peppered Turk’y takes inspiration from classic peppered deli turkey.

It is savory, smoky and finished with the kind of pepper-forward flavor that works particularly well in cold sandwiches and clubs.

At RHW, our Turk’y Club is one of the ways we use it.

But you can also pile it into wraps, paninis or charcuterie-style boards.

There are rules in life.

There are no rules about how high you are allowed to stack a sandwich.

Is Vegan Deli Meat Soy-Free?

Sometimes.

Soy is common in plant-based foods, but vegan deli meat does not have to contain soy.

PLNT Deli's Corn’d Beeph and Roasted Peppered Turk’y are made without soy.

That is important because people searching for plant-based meat often discover that many alternatives rely heavily on soy.

We wanted to offer another option.

If avoiding soy is important to you, you can also read our guide to soy-free vegan food in Atlanta.

Is PLNT Deli Gluten-Free?

No.

Our current Corn’d Beeph and Roasted Peppered Turk’y contain wheat gluten.

They are not gluten-free.

This distinction matters:

Soy-free does not mean gluten-free.

And:

Vegan does not automatically mean allergen-free.

If you have allergies or dietary restrictions, always review the current ingredient and allergen information before purchasing or eating a product.

Is Vegan Deli Meat Healthy?

“Vegan” and “healthy” are not automatically the same thing.

And honestly, that is okay.

Plant-based deli meat can be part of many different styles of eating, but the nutrition varies dramatically depending on the product.

When comparing products, look at things like:

  • Protein

  • Sodium

  • Saturated fat

  • Ingredient list

  • Serving size

  • Allergens

  • How processed the product is

  • What you are eating it with

A deli slice inside a sandwich with vegetables, bread, sauces and cheese is also part of the entire meal.

Nutrition exists in context.

Sometimes you want a green bowl.

Sometimes you want a Reuben.

Life is long enough for both.

How Do You Use Vegan Deli Meat?

This is where things get fun.

Build a deli sandwich

The obvious answer.

Stack your favorite deli slices with vegetables, spreads, vegan cheese and good bread.

Make a hot panini

Build a charcuterie board

Plant-based deli slices work extremely well with:

  • Vegan cheeses

  • Crackers

  • Fruit

  • Pickles

  • Olives

  • Nuts

  • Mustards

  • Spreads

Yes, vegan charcuterie is a thing.

And yes, it disappears at parties.

Add it to breakfast

Plant-based deli slices can work inside breakfast sandwiches, alongside potatoes or chopped into other savory breakfast dishes.

Put it in a wrap

Add greens, vegetables, sauces and your favorite deli slices.

Roll.

Eat.

Repeat.

Complicated recipes are optional.

Vegan Deli Meat vs. Plant-Based Burgers

These are two different categories.

Plant-based burgers are designed to mimic ground meat.

Vegan deli slices are designed to work more like sliced turkey, roast beef, corned beef, ham, salami or other deli meats.

The texture is different.

The seasoning is different.

And most importantly, the sandwich possibilities are different.

Sometimes you want a burger.

Sometimes you want something stacked eight layers high with mustard and pickles.

We know which mood we're usually in.
